Yarra Yering Carrodus Cabernet Sauvignon is sourced exclusively from the original 1969 planted No. 1 vines grown in the south-west corner of the Yarra Yering vineyard.
The handpicked grapes are destemmed and crushed into half tonne open fermenters. The juice is hand plunged twice daily and spends extended time on skins until the tannins soften.
The wine is basket pressed for gentle tannin extraction before being gravity filled to new Bordeaux shaped French oak barrels. It matures for 18 months, completing malolactic fermentation in the winery's cool underground cellars.
Purple crimson, Yarra Yering Carrodus Cabernet Sauvignon is an outstanding cool climate wine with striking purity, texture and structure. Cellaring potential is 20 years.
